Where was Mary Ann SYMMONS or SIMMONS or SYMONS in 1851?

When Mary Ann SIMMONS (or variant) was christened at Berrow in  May 1831 she was unceremoniously described as a "Base born child" and her mother Harriet was entered as a single woman.


Harriet SYMMONS married James MILTON at Burnham on Sea in 1835 witnessed by her father John SIMMONS and on the 1841 census Mary Ann SYMONS is living with her mother and step-father at Wick, South Brent (Brent Knoll).


When Mary Ann SYMONS married John PUDDY at Mark in 1860 she gave her father's name as John SYMONS who was actually her grandfather.  But where was she in 1851?


On the 1861 census she gave her birthplace as Lympsham


She was my husband's great grandmother and I'd like to find out what happened to her.

In 1851 there is a Mary Ann SIMMONS, aged 20, a scullery maid, at the Somerset Hotel, High Street Wells.  But her birthplace is given as Wells.  I can't find a birth in Wells for a Mary Ann SIMMONS or variant so could this be who I'm looking for?  Any suggestions?
